Stay-at-home Family Activity Guide — 5 Healthy & Kids-Friendly Baking Recipes

All of these recipes are LOW IN CALORIES, QUICK and most importantly, YUMMY! 👨🏻‍🍳👩🏻‍🍳



1. SUPER EASY APPLE PIE 🍎

WHY MAKE THEM?

Classic apple pies are complicated to make. This time we'll do it the easy way, and the results are phenomenal! Also, NO refined sugars!


TIME REQUIRED & SERVINGS:

- Preparation: 20 mins, Baking: 15 mins

- 2 Persons (2 apple pies)


INGREDIENTS:

  • Apple

  • Lemon juice

  • 1 tbsp Butter

  • 2 tbsp brown sugar

  • 2 tbsp honey

  • Some Cinnamon

  • Some Dark rum/ Brandy (optional)

  • 2 Pastry sheets

  • 1 Egg

Additional Toppings: Ice-cream, Strawberries, Mint leaves

Special Tools: Baking tray, Rolling pin


INSTRUCTIONS:

For fillings:

  1. Peel 1 apple, cut into bite-sized cubes. (Put them in salted water/ squeeze some lemon juice to prevent oxidation)

  2. Turn up to medium heat, place 1 tbsp butter in the pan & cook apple until color slightly changes.

  3. Add in brown sugar, cinnamon, rum. Turn off heat when apples are soft.

  4. Add some honey for extra flavour, and cool apples on a plate. (Pastry sheet will get soggy if apples weren't cool enough)

For pastry: (To reduce moisture, move pastry sheet from the freezer down to the fridge first)

  1. Put some flour on the board, coat pastry with flour evenly on both sides. Use a rolling pin to adjust size of pastry.

  2. Put apple on top of pastry sheet. (Make sure the apple is fully cooled)

  3. Carve some slices on the other side. (The slices will let the steam comes out easily)

  4. Fold it up & use a fork to seal edges.

Then...

1. Preheat oven to 200C.

2. Place pies on a baking tray & brush some egg wash.

3. Bake about 15 mins. (make sure the other side is also golden!)

4. Add ice cream, cinnamon, fruits, mint leaves if you wish. ENJOY!

SECRET TIPS: 🤫

  • Get a crunchy apple for better texture!

  • Feel free to add raisins, toasted almonds in the filling or on the top.


2. RASPBERRY THUMBPRINT COOKIES 🍪

WHY MAKE THEM?

  • NO Mixer required// NO refined sugars// Super low calories! (46 calories)


TIME REQUIRED & SAVINGS:

- Preparation: 20 mins, Baking: 8-10 mins

- Serves: 24 tiny cookies


INGREDIENTS:

  • 1 cup (120g) whole wheat flour

  • 1 tsp cornstarch (*to keep cookies soft!)

  • ¾ tsp baking powder

  • ¼ tsp salt

  • 1 ½ tbsp (21g) coconut oil/ melted unsalted butter

  • 1 large egg white (room temperature)

  • 1 ½ tsp vanilla extract

  • ½ cup (96g) brown sugar/ coconut sugar

  • 3 tablespoons (60g) jam

Special Tools: Baking sheet, Parchment paper


INSTRUCTIONS:

  1. In a bowl, whisk dry ingredients (flour, cornstarch, baking powder, salt).

  2. In another bowl, whisk butter, egg white, vanilla. Stir in brown sugar.

  3. Mix dry and wet mixtures till well combined.

~~~ Chill dough for 30 minutes in fridge ~~~

4. Preheat oven to 180°C. Line baking sheet with parchment paper.

5. Prepare filling: add jam to a small bowl, stir a few mins with a spoon until it’s smooth. Transfer jam to a small zip-top bag & cut off the corner.

6. Roll cookie dough into 24 small spheres & place on the baking sheet.

7. Using your thumb, make a well in the centre of each cookie dough.

8. Bake at 180°C for 8-10 mins.

9. Let cool & ENJOY!


SECRET TIPS: 🤫

  • You may switch to huckleberries/ blackberries. Let the creativity run wild!

  • Not able to finish at once? No worries! Store in an airtight container in the fridge up to at least 1 week!


3. OVEN BAKED CHOCOLATE DONUTS 🍩 (NOT oil-fried!)

WHY MAKE THEM?

- low-calorie with only 124 calories per donut (a regular fried donut has 200 calories! 😱)

- done in 20 mins from scratch!

- NO flour, NO sugar, yet soft & fluffy!


TIME REQUIRED & SAVINGS:

- Preparation: 10 mins, Baking: 8-10 mins

- 8 donuts


INGREDIENTS:

  • 2 cups ground oats (200g)

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1/2 cup cocoa powder (50g)

  • 2 eggs

  • 1/4 cup coconut oil (50g)

  • 1/2 cup honey, maple syrup or agave (170g)

  • 2/3 cups yogurt (160g)

  • 1 tsp vanilla extract

Cocoa Powder Glaze:

1/4 cup cocoa powder

1/4 cup coconut oil

2 tbsp honey (OR maple syrup)

OR Peanut Butter Glaze:

1/4 cup peanut butter

2 tbsp coconut oil


Special Tool:

- Donut pan (you get it from Amazon) ; OR use Muffin Tray & DIY holes using aluminium foil!


INSTRUCTIONS:

  1. In a large bowl, mix ground oats, baking soda, salt, cocoa powder.

  2. In another bowl, whisk wet ingredients (eggs, melted coconut oil, honey/ maple syrup, yogurt, vanilla extract).

  3. Gently fold in ground oats, cocoa powder & baking powder.

  4. Add wet ingredients into dry ingredients, gently mix till combined. (Don't over-mix, your donuts won't be as fluffy!)

  5. Transfer batter into a piping bag, cut off the corner. Grease donut pan.

  6. Pipe batter into greased donut pan. (Don't overfill the mould, or you'll lose the classic donut shape when they rise too much.)

  7. Bake for 8–10 mins at 180°C

  8. Let it cool in the pan for 5 mins, then transfer to wire rack to cool completely.

  9. Dip donuts into the glaze. Enjoy!


4. BLUEBERRY BANANA MUFFINS 🧁

WHY MAKE THEM?

  • Gluten-Free// NO refined sugars // Filled with antioxidants!


TIME REQUIRED & SERVINGS:

- Preparation: 15 mins, Baking: 25 mins

- 16 muffin cups


INGREDIENTS:

  • 2 bananas (as ripe as possible!)

  • 150g blueberries

  • 250g oats (blend half (125g) into oat flour)

  • 1 egg

  • 3 tbsp honey

  • 185ml milk

  • 1 tsp vanilla extract

  • 1 tsp cinnamon, pinch of salt, 2 tsp baking powder

  • 3 tbsp vegetable/rapeseed oil

Special Tools: Muffin Tray, Paper muffin cups


INSTRUCTIONS:

  1. Preheat oven to 180°C.

  2. Mash 2 ripe bananas.

  3. Mix dry ingredients (oats, oat flour, baking powder, cinnamon, salt) in a large bowl.

  4. Add in mashed bananas & fold in blueberries gently.

  5. Whisk honey, oil, egg, milk, vanilla extract in another bowl.

  6. Add mixture in step (5) into mixture (4).

  7. Divide mix into muffin tray cases.

  8. Bake for 25 mins at 180°C.

  9. Cool on a wire rack. ENJOY!

SECRET TIPS: 🤫

  • You may switch blueberries with strawberries/chocolate chips/ raspberries. Let the creativity run wild!

  • Not able to finish at once? No worries! Freeze them in storage bag up to THREE months. Pop them in the oven & there goes your last minute breakfast/ snack!


5. 5-INGREDIENTS HEALTHY LEMON BARS RECIPE 🍋

WHY MAKE THEM?

Traditional lemon bars are loaded with sugar, butter and condensed milk, but not this!

NO Sugar// Natural, unprocessed ingredients ONLY!


TIME REQUIRED & SERVINGS:

- Preparation: 15 mins, Baking: 10 mins

- Serves: 9 bars/ 16 if smaller pieces


INGREDIENTS:

For crust:

1 cup ground oats (or oat flour) (100g)

1/4 cup honey (85g)

1/4 cup coconut oil (50g)

For filling:

5 eggs

1/2 cup honey (170g)

1/2 cup lemon juice (120ml)

1 tbsp lemon zest

1/3 cup ground oats/ oat flour (35g)

Special Tool: Baking pan (8 x 8 inch/ 20 x 20 cm)


INSTRUCTIONS:

For the crust:

  1. In a bowl, combine ground oats, coconut oil and honey until dough forms.

  2. In a lined 8 by 8 inch (20 by 20 cm) baking pan, spread the oat mixture, pressing with the fingers around the corners.

  3. Bake at 180C for 10 mins. Let it cool while you make the lemon filling.

For the filling:

  1. In another bowl, beat your eggs.

  2. Add the honey, lemon juice, lemon zest and ground oats and mix well.

  3. Pour the egg mixture over the oatmeal crust.

  4. Bake at 180C for 20-25 minutes. (until set but still soft when gently touched)

  5. Let it cool then place the baking pan into the fridge.

  6. Cut in 9 equal squares (or 16 if you want smaller pieces).

SECRET TIPS: 🤫

Dust with powdered sweetener to make it fancier!
